Quick Banana & Peanut Butter Ice Cream


This recipe is delicious, healthy, and so surprisingly creamy that it's hard to believe there's really no cream in there. Note of caution: you really need a food processor to make this- I don't think it would work with a blender.

Three Ingredient Banana, Honey, and Peanut Butter Ice Cream
from Serious Eats

For one serving:
1 large ripe banana
1 tsp peanut butter (or more, if you love PB like me)
1 tsp honey

Peel banana and slice into chunks. Spray cookie sheet and put the chunks on tray, covered lightly with saran wrap. Freeze.

Once frozen, put the banana in the food processor with the PB and honey. Puree until creamy, stopping to scrape the sides if necessary (careful- it will take a little bit of time- it stay chunky for awhile then suddenly turns into ice cream consistency).

Serve! Be amazed at how much it tastes just like ice cream! And it's delicious!

  1. That sounds so good! But I don't have a food processor. Really, truly you don't think it would work in a blender? On liquefy for a long, long time?
