Recipe: Peanut Butter Banana Bread

Next- a yummy recipe! I love peanut butter, and I love bananas- so this recipe from Cooking Light had to be good. And it was! The only change I would make would be to not add peanuts, but use crunchy peanut butter instead- I've adjusted the recipe here. Also, the pictures don't show the glazed version- but the glaze was delicious, I would highly recommend! (you might want to even double it).

Peanut Butter Banana Bread

Peanut Butter Banana Bread

1.5 cups mashed ripe bananas
1/3 c. plain fat-free yogurt
1/3 cup crunchy peanut butter
3 tbsp butter, melted
2 large eggs
1/2 cup white sugar
1/2 cup packed brown sugar
1.5 cups all-purpose flour
3/4 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/8 tsp allspice

For glaze:
1/3 cup powdered sugar
1 tbsp 1% milk
1 tbsp creamy peanut butter


Directions

1) Preheat oven to 350

2) Combine first 5 ingredients in large bowl- beat with mixer at medium speed.

3) Combine flour, baking soda, salt, and spices in medium bowl. Add flour mixture to banana mixture; beat until just blended. Pour batter into a loaf pan coated with cooking spray.

4) Bake at 350F for 1 hour and 5 minutes or until toothpick inserted in center comes out clean. Remove from oven; cool 10 minutes in pan. Remove bread from pan; cool.

5) To prepare glaze, combine 3 glaze ingredients in a small bowl, and stir with a whisk. Drizzle over bread.
