I might have eaten a few of these this week. It's one of my favorite at-home desserts. You buy some of the pre-made cookie dough, pop them in the oven, cool, then sandwich some ice cream (cookies and cream in this case) in between (I should really have Kevin describe this as he's the one who usually makes them and he probably has some tips). Yeah, you could get fancy with homemade cookies and homemade ice cream, but it tastes pretty dreamy just like this.
(Edit by Kevin) These are very easy, just a few tips if you decide to make them. First, you should underbake the cookies by 4-5 minutes. I then let them cool on the baking sheet for a few minutes, then put the entire sheet in the freezer until they're solid. When I'm ready to make the sandwiches, I take the ice cream out to let it soften for awhile, then assemble the sandwiches and put them back in the freezer. Enjoy!
